Damper BLT

Ingredients
6 Damper Rolls
0.5 cup Quality mayonnaise
1 x 250g Pkt KR Castlemaine Bred Free Range Bacon Rashers
3 Medium Ripe Tomatoes, sliced
0.5 Lettuce , washed
Freshly Ground Black Pepper to taste

Method

  1. Cut Damper rolls in half and set aside.
  2. Lay bacon on a tray and place under the pre-heated grill and cook on high 4 mins then turn and continue to cook for a further 4 minutes until bacon is crisp.
  3. Whilst bacon is cooking spread the base and crown liberally with Mayonnaise. Place two slices of tomato onto the base of each damper roll .
  4. Break lettuce leaves into bite sized pieces and place 6 or 7 pieces over the tomato.
  5. Top lettuce with a piece of crispy KR Bred Free Range Bacon and cover with the crown.
  6. Serve Hot.

    Avocado , BBQ Sauce or chutney are great additions to the BLT
